The basic recipe is very simple and uses the same ingredients as you use for meatballs.

  • 200 ml of milk
  • 2 eggs
  • 2 teaspoons of mustard

  • 2 teaspoons of salt
  • 1 teaspoon pepper
  • 2 teaspoons of paprika powder

Which minced meat goes in the meatloaf?

Traditionally, mixed minced meat (beef and pork) is used for a meat loaf.

Of course, you can also use other varieties, such as lamb and beef, just beef or turkey, if you prefer.

You can also use this recipe to prepare a poultry meatloaf or turkey meatloaf.

The nice thing about meatloaf is that you can fill it with all kinds of delicious things and always have a great, new taste experience.

So you can fill and modify the meatloaf

  • Cheese cubes, feta cheese
  • Hard-Boiled Eggs - This is a great classic too!
  • Olives, diced peppers, mushrooms
  • Herbs like oregano or basil
  • Wrapped in bacon - you can wrap the meatloaf in bacon or bacon.

If there is any leftover meatloaf, you can store it in the refrigerator for 2 days like meatballs.

  • 800 g minced meat mixed
  • 1 ½ stale rolls or breadcrumbs
  • 2 onions
  • 200 ml of milk
  • 2 eggs
  • 2 teaspoons of mustard
  • 1 clove of garlic
  • ½ bunch of parsley
  • 2 teaspoons of salt
  • 1 teaspoon pepper
  • 2 teaspoons of paprika powder
  • Oil for frying

Also for the sauce:

  • 250 g white or brown mushrooms
  • 2 onions
  • 12 cherry tomatoes
  • 300 ml beef broth
  • 200 ml of cream
  • 200 crème fraîche
  • 1 teaspoon salt
  • ½ teaspoon pepper

And that's how it's done

Preheat the oven to 180 degrees top and bottom heat.

  • Chop the onions and chop the parsley.
  • Briefly sweat the onions in a pan and then let them cool.
  • Tip: This step is optional. You can also prepare the meatloaf with raw onions.
  • Cut the rolls into small pieces and soak them in milk for a few minutes. Then take it out and squeeze out the milk with your hands.
  • Note: You can also use breadcrumbs instead of the rolls. If you put breadcrumbs in your meatloaf instead of rolls, it will be a little firmer.
  • Put the minced meat together with the bread roll, onions, egg and spices in a large bowl and mix everything well with your hands.
  • Season to taste with salt and pepper and chill for about 10 minutes so that everything can flow properly.
  • Tip: Due to the resting time, the meatloaf does not fall apart so easily later
  • Shape a loaf of meatloaf from the minced meat mixture with damp hands.
  • Place the meatloaf in the center of a greased baking dish and sprinkle with breadcrumbs.
  • Note: The breadcrumbs give the meatloaf a nice crust.
  • Clean and quarter the mushrooms.
  • Wash the cherry tomatoes and cut in half.
  • Spread the mushrooms, tomatoes and onions around the meatloaf.
  • Mix the beef broth, cream and crème fraîche together and season with salt and pepper.
  • Spread the sauce around the meatloaf.
  • Now place the meatloaf in the middle of the preheated oven for 45 to 50 minutes.
  • Tip: You can also use a meat thermometer to tell exactly when the meatloaf is cooked through.
  • Take the meatloaf out of the oven, let it cool down briefly and then cut it into slices.
  • Arrange on plates with the sauce and vegetables and serve.
  • Potatoes or mashed potatoes go well with this.
