This vegan spring roll recipe with step-by-step instructions is easy to prepare and tastes even better than in a Chinese restaurant! They are filled with healthy vegetables and wrapped in rice paper. Vegan, gluten free and so delicious!

Crunchy vegan spring rolls

One of my favorite dishes on warm summer days are homemade spring rolls with a vegetable filling! I've made them a couple of times because they taste much better than store-bought ones! To be honest, it makes a huge difference whether you make Chinese spring rolls yourself or buy them. For me, the perfect spring rolls always have to be filled with lots of fresh vegetables!

Another great thing about making homemade spring rolls is that you can vary the ingredients as you wish. I prefer Chinese vegetables like red cabbage, spring onions, carrots, and smoked tofu. Sometimes I also like to add mushrooms, rice noodles or kimchi as a filling. Mung bean sprouts or rice are also good options. You can also fry or steam the veggies before wrapping them in the rice paper, but I prefer the veggies to be fresh and crisp.

Gluten-free spring roll sheets

You don't need to make batter to make vegan spring rolls. They are only wrapped in rice paper, which you can find in almost every Asian store, in normal supermarkets or online. Rice paper comes in a variety of sizes and shapes, but I prefer frozen square sheets of paper. To thaw, I just put them in the fridge overnight and then they can be used the next day. Alternatively, you can make the dough yourself with mine Dumplings recipe.

Once the vegetables are prepared, you can start folding the spring rolls. Since the spring roll leaves dry out very quickly, I always cover them with a damp kitchen towel. The spring rolls that have already been rolled should also be covered so that they do not dry out while the other rolls are being prepared. But you can also fry them immediately after rolling.

Spring rolls with vegetables & tofu

I love when recipes are simple AND delicious! That's why I kept the preparation of the filling very simple. All you have to do is chop the vegetables very finely and cut the tofu into thin strips. After slicing the cabbage, I add a little salt and massage it with my hands for 2-3 minutes. Then I set it aside for about 10 minutes so that it becomes softer and easier to squeeze out.

Squeeze the vegetables

It is very important that all the ingredients for the filling do not contain a lot of liquid. So please make sure that you squeeze out as much water as possible when using vegetables with a high water content, such as spinach. Otherwise, the liquid could soften the rice paper, causing it to tear quickly.

Fold spring rolls

Place a single piece of rice paper on a flat surface with one corner facing you. Now place a small pile of the prepared vegetables and tofu on the lower part. Then you roll it up tightly, stopping halfway, and fold the right and left corners inward. Now smear a little of the starch mixture on the top corner, and finish rolling up the spring roll. The starch mixture serves as a kind of glue for sealing.

Bake or deep-fry crispy spring rolls?

You can either bake vegan spring rolls in the oven to make them healthier or lower in fat. Or you can deep fry them for a tastier result. If you want to bake them, simply brush the rolls with a little oil and bake them at 220 ° C. If you want to deep-fry them, your oil needs to be hot enough (around 185 ° C). If you don't have a thermometer, you can use a wooden stick to test. Just carefully dip it into the hot oil and when it bubbles and hisses, the oil is ready.

Can i freeze vegan spring rolls?

These Chinese spring rolls are very easy to freeze! You can first simply place them next to each other on a flat board and freeze them overnight. Once they're frozen, you can transfer them to a freezer bag to save space. When I make this spring roll recipe, I usually fry some right away and freeze the rest so I can make fresh homemade spring rolls whenever I want!
